How to transform a wedding cake

I'm a bit of a makeover fan. I love seeing houses transformed, men having their first haircut in ten years, that sort of thing. 

 

I'm no different when it comes to cake. I like to see change. I like a cake to be the best it can be, which is one of the reasons I ask for creative judgement when customers come to me for a cake. To the untrained eye, it may seem like a tiny piece of lace or a small sugar flower, but to me it's the difference between a nice cake and something with real wow factor.

 

So I've put together my top three wedding cake transformations.

 

Enhance your cake

 

The cake already looks lovely. It's got sharp edges and is peach ombre (very on-trend). But there's something missing. Here five sugar flowers are added with green leaves to enhance the pastel peach colour.

 

 

Make it even more special

 

So there are two colours. There's gold lace. It already looks lovely. Why would you...oh, that's why! A day spent adding royal icing and making fifty tiny gypsophila flowers, not to mention a rose and a peony or two, and the look's complete. 

 

 

From ugly duckling to beautiful swan

 

Okay, so ugly duckling's a bit harsh, but you have to admit this one's almost unrecognisable. The tree's made from chocolate fondant (yum!), the floating sugar butterflies are on invisible wires, and the whole thing had to be transported in one, which, if you've never done it, is not particularly easy. But then again, neither's a cake transformation.
