2 things to do with leftover gluten-free hot cross buns


Stop laughing. There are some people who have leftovers. There are even coeliacs with leftovers. Admittedly, it's a rarity in my house, but that doesn't mean it doesn't happen. So if you bought in too many hot cross buns over Easter and you're wondering what to do with them, all is not lost.

The family in this picture are clearly not going to have leftovers - it'll all be too yummy!

One of the great things about a recipe for leftovers is it often relies on them having gone a bit stale. Since packaged gluten-free food sometimes tastes less than brilliant even before its best before date, it makes it an ideal candidate for the following ideas.

Hot Cross Bread & Lemon Pudding

If you click here you'll find a link to the BBC Good Food site where they champion this luscious dessert, which also uses up any leftover cream you might have (again, not a typical issue in my house, but it has been known to happen). You'll need to have a stash of lemon curd (not necessarily a cupboard staple, I know) but perhaps it's worth buying in just to use up other food. I'm sure that makes financial sense somehow.

Spiced Gluten-Free Apple Betty

If you're not in the mood or really don't have the time to follow intricate instructions, here's something simple you can do for a Tuesday treat (and all you need are 3 ingredients).

If you can't face a lengthy recipe, grab some apples for your hot cross buns

Ingredients: hot cross buns, orange juice & apples

Method:

  1. Preheat oven to 190 Celsius.

  2. Peel, core & slice some apples into a pie dish.

  3. Drizzle with orange juice.

  4. Blitz your hot cross buns in a blender until they resemble breadcrumbs.

  5. Scatter over the top of the apples.

  6. Place dish in oven for 20-25 mins until golden brown.

  7. Serve with icecream, cream or natural yogurt (depending on what you have left after Easter).

So there you have it. Two ways of using up those buns. That is, if you haven't already scoffed them all (like me).
