Picture this: you're standing in front of a stunning three-tier wedding cake, adorned with delicate pink chocolate roses and a delicious, captivating scent. Your guests are oohing and ahhing, desperate to take photos and tuck in, and you're about to have what might just be the most Instagram-worthy moment of your entire wedding day.

But, plot twist! Your gorgeous cake is completely gluten-free, and absolutely no one can tell!


Why I Began Making Gluten-Free Cakes

When I got coeliac disease I realised I just had to make a decent gluten-free cake. I'd always made cakes, including a hand-painted chess cake for my grandfather's 90th, and I was determined to make a decent gluten-free version.


It wasn't easy - there was a lot of taste testing and binned attempts - but after years of trying, I finally found a recipe that would go on to win multiple awards.


But that wasn't enough. I needed the cakes to look amazing, too. So I studied the art of sharp edges and spent years learning stunning sugarcraft. And that's when I began my gluten-free cake business.


Breaking the Gluten-Free Stereotype (One Slice at a Time)

Having a gluten-free cake doesn't mean it has to taste inferior. I've multiple awards and 5 star reviews to prove otherwise! But I'll admit there's a reason for the gluten-free stereotype (i.e. that it doesn't taste great) and I'm embarrassed for the cake businesses that think their cakes are decent enough to sell.


But that doesn't have to be your experience. I promise when you've had your cake tasting you'll understand why people without dietary requirements still want my cakes - because they taste and look amazing!


The Most Popular Wedding Cake Designs

The taste of the cake isn't the only bit that's fun, though - let's talk about design! Wedding cakes today are so different from when I grew up and everyone wanted royal iced fruit cakes with ribbon insertion.


Designs for 2025


  • Chandelier cakes where even the staff are in awe of the cake (and half the room wonders how it's defying gravity)

  • Naked and semi-naked cakes are ones I'm asked to do time and time again. There's very little buttercream and they're perfect for a fuss-free down to earth couple, especially if you're having a rustic or barn wedding.

  • Painted cakes with either flowers or silhouette designs

  • Bride and groom toppers made from sugar in the very outfits you'll be wearing on the day!


But here's my favourite part about designing wedding cakes – every single one tells a story - and it might be included visually on the design. And that's one of the privileges of my job - that together we craft a design that enhances your big day.

And the best part? Every single one of these is made gluten-free without losing an ounce of flavour or that perfect, moist crumb that makes people clamour for more.


The Cake Tasting

This tends to be the most fun part of organising a wedding! Just let me know the flavours you'd like to taste and you can either collect them from The Bakehouse in Bristol or I can post you out a sample.


Then, after you've had a wonderful time with your partner tasting all the flavours, we'll meet on Zoom to decide what design would be best at your wedding. So whether it's a hanging chandelier cake or a 3 tier naked cake decorated with fresh strawberries or figs, we'll work out what would be best for your wedding, and whether you need an extra tier to save for the following day to extend your wedding experience with a little champagne and close friends.


Planning Your Perfect Cake

Now that you've decided you're getting married, here are some top tips for ensuring you get the cake you need.


Start early – dates can book up quickly, especially during peak wedding season. Many people order from me 2 years in advance.

Come prepared – if you see an image you love, show it to me in the Zoom design session so we can chat about what would work best for you.

Be open to suggestions – sometimes you may not have considered an option that would work really well for you. That's why we have a design session where we can talk through logistics like the temperature on the day, whether you need cake boxes and what time you'll be cutting the cake.

Get excited – there's so much to enjoy when it comes to your wedding cake - you're going to love the process!
